Refrigerator Bread and Butter Pickles

My mother makes these amazing pickles and I INSISTED we post the recipe here on the blog – they taste like a great bread and butter pickle… but the onion just adds that little extra something you don’t normally get in homemade pickles – and you definitely do not get them in the store bought.

Refrigerator Bread and Butter Pickles

Ingredients:
– 5 1/2 cups cucumbers sliced in 1/4 inch slices (approximately 1.5 pounds)
– 1 cup thinly sliced onion
– 1 cup natural sugar
– 1 cup white vinegar
– 1/2 cup apple cider vinegar
– 1/2 cup brown sugar
– 1.5 Tablespoon kosher salt
– 1.5 teaspoon mustard seed
– 1/2 teaspoon celery seed
– 1/8 teaspoon ground tumeric

Instructions:
1) Put cucumbers in a large bowl and sprinkle with salt
2) Toss the cucumbers in the salt
3) Cover the bowl and put in the refrigerator for 1.5 hours
4) Rinse the cucumbers with cold water and drain
5) Add the onions to the cucumbers and set aside
6) In a sauce pan, combine the vinegars, sugars, seeds, and tumeric
7) Simmer the sauce pan mixture until the sugars are dissolved
8) Pour the hot mixture over the cucumber and onions and cover
9) Let the mixture stand at room temperature for approximately 1 hour
10) Transfer the mixture into mason jars with lids
11) Place all jars into the refrigerator for 24 hours
